For a versatile and crowd-pleasing recipe, these chicken nuggets are an ideal choice. Made with boneless, skinless chicken breasts and a blend of mozzarella, Parmesan, and spices, they offer a deliciously satisfying bite every time.

Ingredients

For the Chicken Nuggets:

  • 1 1/2 pounds boneless, skinless chicken breasts (approximately 3 large)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour, cornstarch, or gluten-free potato starch
  • 4 ounces mozzarella cheese (about 1 1/3 cups, grated)
  • 1 1/2 teaspoons chopped fresh dill
  • 1/2 teaspoon salt (or to taste)
  • 1/8 teaspoon black pepper
  • 2 tablespoons light olive oil (or any high-heat cooking oil), for frying

For the Garlic Aioli (Optional):

  • 1/3 cup mayonnaise
  • 1 garlic clove, pressed
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Preparation

  1. Cut the chicken breasts into 1/3-inch thick pieces and place them in a large mixing bowl. For easier cutting, consider partially freezing the chicken breasts before chopping.
  2. In a separate mixing bowl, combine 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 teaspoons dill, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Stir until well mixed.
  3. Add the egg mixture to the chicken and stir until fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  4. Heat the olive oil in a frying pan over medium heat. Once hot, add the chicken nuggets and cook until golden brown and crispy, about 3-4 minutes per side.
  5. For the garlic aioli, simply mix the mayonnaise, pressed garlic, lemon juice, salt, and black pepper in a small bowl.
  6. Serve the chicken nuggets hot with garlic aioli on the side, and enjoy!
