Apple Fritters

Ingredients:

For the Fritters:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • Vegetable oil (for frying)

For the Glaze:

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions:

Prepare the Fritters:

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until evenly mixed.
  2. In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
  3. Gradually add the wet ingredients to the dry mixture, stirring until just combined. Be careful not to overmix.
  4. Gently fold in the diced apples until they are evenly distributed throughout the batter.

Heat the Oil:

  1. Pour vegetable oil into a large, heavy-bottomed pot, ensuring it reaches a depth of about 2 inches.
  2. Heat the oil over medium heat until it reaches 375°F (190°C). Use a thermometer to monitor the temperature closely.

Fry the Fritters:

  1. Carefully spoon about 1/4 cup of batter into the hot oil, frying a few fritters at a time to avoid overcrowding.
  2. Fry each side for 2-3 minutes, or until golden brown and thoroughly cooked.
  3. Using a slotted spoon, remove the fritters and place them on a paper towel-lined plate to drain excess oil.

Make the Glaze:

  1. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until the mixture is smooth and well-blended.

Glaze the Fritters:

  1. While the fritters are still warm, dip each one into the glaze, ensuring they are completely coated.
  2. Place the glazed fritters on a wire rack set over a baking sheet to catch any excess glaze.
  3. Allow the glaze to set for a few minutes before serving.

Serve:

Enjoy these apple fritters warm, either on their own or paired with a scoop of vanilla ice cream. Their crispy exterior and tender, flavorful interior make them an ideal treat for breakfast or dessert.
