Chicken Alfredo Lasagna Rolls: A Perfect Dish for Special Occasions

I recently prepared Chicken Alfredo Lasagna Rolls for my son-in-law’s 40th birthday party, and they were a tremendous hit! This dish combines the rich flavors of Italian cuisine with a creamy Alfredo touch, making it ideal for family gatherings and special events. Here’s how to create this delightful meal:

Ingredients

For the Lasagna Rolls:

  • 8 cooked lasagna noodles, drained
  • 2 cups ricotta cheese
  • 1 ¾ cups cooked chicken breast, shredded
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 teaspoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

For the Alfredo Sauce:

  • ¼ cup unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Preparation

1. Prepare the Filling:

  • In a bowl, combine ½ cup shredded chicken breast, 1¼ cups ricotta cheese, ⅜ cup shredded mozzarella cheese, ¼ cup grated Parmesan cheese, minced garlic, and chopped parsley.
  • Season with salt and pepper as desired. Mix until smooth.

2. Assemble the Rolls:

  • Lay out the cooked lasagna noodles. Spread a generous amount of the chicken Alfredo mixture along each noodle, leaving a small border at the edges.
  • Carefully roll up each noodle and place them side by side in a baking dish.

3. Make the Alfredo Sauce:

  • In a saucepan, melt ¼ cup of unsalted butter over medium heat.
  • Sauté the minced garlic until fragrant. Add 1 cup of heavy cream and bring to a simmer.
  • Stir in 1 cup of grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

4. Assemble and Bake:

  • Pour the Alfredo sauce evenly over the lasagna rolls in the baking dish.
  • Top with the remaining ½ cup shredded mozzarella and ¼ cup grated Parmesan cheese.
  • Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and golden brown.
