Cream Cheese and Bacon-Stuffed Doritos Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 4 oz (115g) cream cheese, softened
  • ½ cup (60g) shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 1 cup (120g) crushed Doritos chips
  • 2 large eggs, beaten
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a baking dish with olive oil to prevent sticking.
  2. Prepare the Chicken: Carefully butterfly each chicken breast, cutting a pocket into the side of the chicken without slicing all the way through. Season the inside with a pinch of salt and pepper.
  3. Make the Filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and crumbled bacon. Mix until well combined.
  4. Stuff the Chicken: Generously fill each chicken breast with the cream cheese mixture. Press the edges of the chicken to ensure they are sealed tightly.
  5. Coat the Chicken: Dip each stuffed chicken breast into the beaten eggs, making sure it’s fully coated. Then, roll the chicken in the crushed Doritos chips, pressing gently to help the crumbs adhere.
  6. Bake: Place the coated chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Doritos coating is golden and crispy.
  7. Serve: Once baked, remove the chicken from the oven and allow it to cool for a few minutes before serving. Enjoy this crispy, creamy, and flavorful dish with your favorite sides!
