Sweet Blueberry Biscuits Recipe

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 cup cold milk
  • ⅓ cup sugar
  • 5 tablespoons butter (cold or frozen)
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces blueberries (fresh or dried)

For the Glaze:

  • 1 cup powdered sugar
  • ⅛ cup water
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon juice

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 450°F (230°C). This ensures that the oven is at the right temperature when your biscuits are ready to bake.
  2. Prepare the Dry Ingredients: In a large mixing bowl, combine the flour, sugar, salt, and baking powder. Stir the dry ingredients until they are well mixed.
  3. Incorporate the Milk and Blueberries: Pour the cold milk into the dry ingredients and gently fold in the blueberries. Be careful not to overmix, as this could break the blueberries and make the dough too wet.
  4. Add the Butter: Take the butter out of the freezer, where it should have been chilling for about an hour. Grate or cut the butter into small chunks and distribute it evenly over the dough. Fold and knead the dough lightly to incorporate the butter evenly. This process creates layers and helps the biscuits become flaky.
  5. Shape the Biscuits: Transfer the dough to a floured surface. Roll the dough out to a thickness of about ¼ to ⅛ inches. Use a biscuit cutter to cut out approximately six biscuits from the dough.
  6. Bake the Biscuits: Place the biscuits on a baking sheet and bake in the preheated oven for 7 to 12 minutes, or until the tops are golden brown.
  7. Add the Butter Topping: Once the biscuits are done, melt 1 tablespoon of butter in the microwave. Brush the melted butter over the tops of the hot biscuits for added flavor.
  8. Prepare the Glaze: In a small bowl, mix the powdered sugar, water, vanilla extract, and lemon juice until smooth. The consistency should be pourable but not too runny.
  9. Finish and Serve: Drizzle the glaze over the warm biscuits and serve immediately. Enjoy your sweet blueberry biscuits with a cup of tea or coffee.

These sweet blueberry biscuits are perfect for breakfast, brunch, or a delightful snack. The combination of the flaky, buttery biscuit with the sweetness of the blueberries and the tangy glaze makes for a treat that’s hard to resist.
