Mini Peanut Butter Pies

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 cup creamy peanut butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream

For the Topping (Optional):

  • Whipped cream
  • Chopped peanuts
  • Chocolate shavings

Instructions:

Prepare the Crust:

  1. In a medium bowl, combine graham cracker crumbs and granulated sugar.
  2. Stir in the melted butter until the mixture is evenly combined.
  3. Press the mixture into the bottom and up the sides of small tart pans or cupcake liners set in a muffin tin to form the crust.
  4. Refrigerate the crusts to set while preparing the filling.

Make the Filling:

  1. In a large bowl, beat the peanut butter and cream cheese until smooth and creamy.
  2. Add powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.

Assemble the Pies:

  1. Spoon the peanut butter filling into the prepared crusts, smoothing the tops with a spatula.
  2. Refrigerate for at least 2 hours or until the pies are set.

Serve:

  1. Optionally, top the mini peanut butter pies with whipped cream, chopped peanuts, and chocolate shavings.
  2. Serve chilled and enjoy the creamy, peanut buttery delight!
