Ingredients

  • Salt: ⅛ tsp
  • Butter, softened: ½ cup
  • Crushed Pineapple, drained (reserve the liquid): 1 cup
  • Large Eggs: 2
  • All-Purpose Flour: 1 ½ cups
  • Reserved Pineapple Liquid: ¼ cup
  • Granulated Sugar: ¼ cup
  • Milk: 2 tbsp
  • Baking Powder: 2 tsp

For the Glaze:

  • Reserved Pineapple Liquid: 2 tbsp
  • Confectioners’ Sugar: 1 cup
  • Vanilla Extract: 1 tsp

Instructions

  1. Preheat Your Oven: Set your oven to 350°F (175°C) and allow it to reach the desired temperature.
  2. Prepare the Dry Ingredients: In a medium-sized mixing bowl, sift together the all-purpose flour, salt, and baking powder. This step ensures that all the dry ingredients are evenly mixed, which is crucial for a consistent bake.
  3. Cream the Butter and Sugar: In a separate large mixing bowl, combine the softened butter and granulated sugar. Beat these ingredients together until the mixture is smooth and creamy.
  4. Incorporate the Eggs: Add the large eggs to the butter and sugar mixture, one at a time, beating thoroughly after each addition to ensure a smooth blend.
  5. Mix in the Pineapple Liquid and Dry Ingredients: Gradually alternate between adding the reserved ¼ cup of pineapple liquid and the sifted dry ingredients to the butter mixture. This step-by-step approach helps to avoid lumps and ensures a well-integrated batter.
  6. Add the Milk: Pour in the milk and stir until fully incorporated into the batter.
  7. Fold in the Crushed Pineapple: Gently fold the drained crushed pineapple into the batter, being careful not to overmix, to maintain a light texture.
  8. Prepare for Baking: Transfer the batter into a greased loaf pan, spreading it evenly.
  9. Bake: Place the loaf pan in the preheated oven and bake for 50-55 minutes. To check if it’s done, insert a skewer into the center of the loaf; it should come out clean.
  10. Cool: Once baked, allow the loaf to cool in the pan for 10-15 minutes. Then, carefully remove it from the pan and place it on a cooling rack to finish cooling.
  11. Prepare the Glaze: In a small bowl, mix together the reserved pineapple liquid, confectioners’ sugar, and vanilla extract until smooth.
  12. Glaze the Loaf: Once the loaf is completely cooled, drizzle the glaze evenly over the top. Let the glaze set before slicing and serving.
