Irresistible Peach Fritters

There’s something undeniably delightful about these peach fritters. Their warm, golden exterior and tender, fruity interior make them a treat that’s hard to resist.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 ripe peaches, peeled, pitted, and diced
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. Set aside.
  2. In a separate bowl, whisk the eggs, then incorporate the milk and vanilla extract, stirring until well blended.
  3. Gradually add the wet mixture to the dry ingredients, mixing until just combined. Be careful not to overmix, as this can result in tough fritters.
  4. Gently fold in the diced peaches, ensuring they are evenly distributed throughout the batter.
  5. Heat the vegetable oil in a large skillet or deep fryer over medium-high heat until it reaches 375°F (190°C).
  6. Using a spoon or small scoop, carefully drop portions of the batter into the hot oil, frying a few fritters at a time to avoid overcrowding the pan.
  7. Fry each fritter for 2-3 minutes per side, or until they are golden brown and fully cooked through.
  8. Remove the fritters with a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.
  9. Once all fritters are cooked and slightly cooled, dust them generously with powdered sugar before serving.

Variations and Tips

For an added burst of flavor, consider mixing in some fresh blueberries or raspberries along with the peaches for a delightful mixed fruit fritter. Experiment with spices like nutmeg or cardamom to elevate the flavor profile. If you prefer a lighter texture, substitute half of the all-purpose flour with whole wheat flour. For a gluten-free option, use a gluten-free flour blend in place of regular flour, maintaining the same proportions.

Enjoy these delectable fritters as a perfect accompaniment to your morning coffee or as a delightful dessert to end any meal.
