Scalloped Potatoes

Ingredients:

  • 2 tablespoons unsalted butter
  • Freshly cracked black pepper
  • 3/4 to 1 cup of Parmesan cheese, grated
  • 1 teaspoon dried thyme
  • Kosher salt
  • 1 1/2 cups heavy cream
  • 6 medium-sized russet potatoes, peeled, cleaned, and thinly sliced lengthwise
  • 4 cloves garlic, minced

Instructions:

1. Prepare the Cream Sauce:

In a medium saucepan, combine the heavy cream, minced garlic, and dried thyme. Heat the mixture over medium heat until warmed through, allowing the flavors to meld together.

2. Slice the Potatoes:

While the cream mixture is heating, carefully slice the potatoes into thin, even slices. Though this step requires some patience, the thin slices will ensure a perfectly creamy texture in the final dish.

3. Preheat and Prepare the Oven:

Preheat your oven to 375°F (190°C). Generously butter a baking dish; a classic pie dish works well for this recipe.

4. Layer the Potatoes:

Begin layering the potato slices in the prepared dish, slightly overlapping each slice. Once the first layer is complete, season with kosher salt and cracked black pepper. Sprinkle a portion of the grated Parmesan cheese over the top, followed by a small amount of the warmed cream mixture. Repeat this process three more times, creating a total of four layers. For the final layer, ensure the potatoes are fully covered with the remaining cream and sprinkle the top with the rest of the Parmesan cheese.

5. Bake:

Place the dish in the preheated oven and bake for 50 to 55 minutes, or until the cream is bubbling and the top is a rich, golden brown. The potatoes should be tender when pierced with a fork.

6. Rest Before Serving:

Once baked, remove the dish from the oven and allow it to rest for about 10 minutes. This resting period is crucial as it allows the cream to thicken slightly, ensuring the dish holds its shape when served and preventing burns from the hot cream.

Serving Suggestion:

These scalloped potatoes are a luxurious side dish that pairs exceptionally well with baked ham. However, their rich, creamy flavor makes them a satisfying snack on their own, perfect for a late-night indulgence.
