Cheesesteak Tortellini with a Velvety Provolone Sauce

Ingredients:

For the Tortellini:

  • 1 lb cheese tortellini (fresh or frozen)
  • 1 tablespoon olive oil

For the Cheesesteak Filling:

  • 1 lb thinly sliced beef steak (ribeye or sirloin recommended)
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • Salt and pepper to taste

For the Provolone Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • Salt and pepper to taste

Instructions:

1. Prepare the Tortellini:

Cook the cheese tortellini according to the package directions until they reach an al dente texture. Once cooked, drain the tortellini and toss with 1 tablespoon of olive oil to keep them from sticking together. Set aside.

2. Cook the Cheesesteak Filling:

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the thinly sliced beef, onions, and green bell pepper. Sauté the mixture, stirring frequently, until the beef is nicely browned and the vegetables have softened. Season with salt and pepper to taste. Remove from heat and set aside.

3. Prepare the Provolone Sauce:

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about a minute. Gradually add the milk, whisking continuously to ensure a smooth mixture. Continue to cook until the sauce thickens. Reduce the heat to low, then stir in the shredded provolone cheese, whisking until the cheese has fully melted and the sauce is smooth. Season with salt and pepper to your liking.

4. Combine and Serve:

In the skillet with the cheesesteak filling, add the cooked tortellini and pour over the provolone sauce. Gently toss the mixture until the tortellini and filling are evenly coated in the sauce. Heat the dish through, then serve immediately. For an extra touch of flavor, garnish with additional shredded provolone cheese.
