Perfect Vanilla Cupcakes

Ingredients:

  • 4 eggs
  • 200 grams sugar
  • 250 ml milk
  • 65 ml oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 300 grams cake flour

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the eggs and sugar. Whisk them together until the mixture becomes pale in color and slightly foamy.
  3. In a small saucepan, add the oil to the milk and gently heat the mixture until warm, ensuring it does not boil to prevent cooking the eggs. Stir continuously.
  4. Gradually mix the baking powder into the egg mixture.
  5. Slowly add the warm milk mixture to the egg mixture, stirring constantly to combine.
  6. Add the salt to the mixture.
  7. Sift the cake flour and gradually fold it into the batter until well combined.
  8. Pour the batter into cupcake liners, filling them about 2/3 full.
  9. Bake in the preheated oven for approximately 18 minutes, or until a toothpick inserted into the center comes out clean.
