Ingredients:

  • 3-pound beef chuck roast
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • 4 whole garlic cloves
  • 1 red onion, thinly sliced
  • 1 cup Italian dressing
  • 1 cup beer of choice
  • 2 bay leaves
  • Hawaiian slider buns
  • Colby Jack cheese slices

Preparation:

  1. Prepare the Slow Cooker: Place the 3-pound beef chuck roast in a 6-quart or larger slow cooker.
  2. Season the Meat: Evenly season the roast with salt, black pepper, and smoked paprika (if using). Arrange the garlic cloves on top of the roast and scatter the sliced red onion over it.
  3. Add Liquid Ingredients: Pour the Italian dressing and your preferred beer over the seasoned roast. Place the bay leaves on top.
  4. Slow Cooking: Cover the slow cooker with its lid and cook the roast on high for 6 hours or on low for 8 to 10 hours. Resist the temptation to lift the lid during the cooking process to ensure even cooking.
  5. Finishing Touches: Once cooking is complete, remove and discard the bay leaves. Using two forks, shred the beef directly in the slow cooker, mashing the garlic into the meat for added flavor. Discard any excess fat and drain off the grease.
  6. Assembling the Sliders: Preheat the broiler. Arrange the bottoms of the Hawaiian slider buns on a baking tray. Pile the shredded beef onto each bun base and top with a slice of Colby Jack cheese.
  7. Broil and Serve: Place the tray under the broiler just until the cheese melts. Top each slider with the remaining bun halves and serve immediately.
