Skillet Chicken, Noodles, and Vegetable Delight

Ingredients:

  • 10 ounces of egg noodles
  • 2 tablespoons unsalted butter
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 ½ cups frozen peas and carrots, thawed
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 ½ cups cooked chicken breast, diced
  • Salt and pepper to taste

Instructions:

  1. Cook the Noodles: Begin by cooking the egg noodles according to the package instructions until they reach an al dente texture. Once done, drain and set aside.
  2. Sauté the Vegetables: In a large skillet, melt the unsalted butter over medium-high heat. Add the chopped onion, minced garlic, Italian seasoning, thawed peas, and carrots. Season with salt and pepper. Sauté for approximately 3 minutes, or until the onions become soft and translucent.
  3. Prepare the Sauce: Gradually stir in the flour, ensuring it blends smoothly with the sautéed vegetables. Slowly pour in the chicken broth and heavy cream, bringing the mixture to a gentle boil. Reduce the heat and allow the sauce to simmer, stirring occasionally, until it thickens, about 5 minutes.
  4. Combine and Serve: Add the drained noodles and diced chicken breast to the skillet. Stir well to ensure everything is evenly coated with the creamy sauce. Adjust the seasoning with additional salt and pepper if needed.
  5. Serve: Serve the dish hot and enjoy the comforting flavors of this hearty skillet meal!
