Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • 1 tablespoon pure olive oil
  • 2 tablespoons garlic, finely chopped
  • 1 1/2 cups white wine (Chardonnay is recommended)
  • Juice of 1/2 fresh lemon
  • 1 teaspoon Italian seasoning
  • 1/2 cup softened butter
  • 1 tablespoon parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Prepare the Shrimp:

    Start by heating a cast iron skillet over medium-high heat and adding the olive oil. Once the oil is hot, add the shrimp to the skillet. Cook them until they are tender and no longer translucent, being careful not to overcook. Once the shrimp are cooked through, reduce the heat and remove them from the skillet. Set the shrimp aside for later.

  2. Cook the Garlic:

    In the same skillet, add the finely chopped garlic. Cook the garlic for about 2-3 minutes, making sure it does not brown, as this can cause a bitter flavor.

  3. Make the Sauce:

    After the garlic has softened, add the white wine and lemon juice to the skillet. Cook the mixture until the wine has reduced by half. Once the wine is reduced, stir in the Italian seasoning.

  4. Finish the Sauce:

    Reduce the heat to low and add the softened butter to the skillet. It’s important to keep the heat low to prevent the butter from separating. Once the butter has melted and combined with the sauce, return the shrimp to the skillet.

  5. Season and Serve:

    Stir the shrimp into the sauce until they are well coated. Add the chopped parsley and season the dish with salt and pepper to taste. Finally, sprinkle the grated Parmesan cheese over the shrimp.
