Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter

Ingredients

  • 1 package Cheddar Bay Biscuit Mix
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

For the Crab Filling:

  • 1 pound lump crab meat (fully cooked)
  • ¼ tsp paprika
  • ½ tsp onion powder
  • ½ cup + 2 tbsp mayonnaise
  • 1 tbsp mustard
  • ½ sleeve Ritz crackers, crushed
  • 1 cup grated Parmesan cheese

For the Lemon Butter:

  • 2 tbsp melted butter
  • 1 tsp lemon juice

Instructions

  1. Prepare the Cheddar Bay Biscuit Mix according to the package instructions and set aside.
  2. Preheat your oven to 375°F (190°C) and spray two muffin tins with nonstick spray.
  3. In a bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise, and crushed crackers. Mix well, adding a bit more mayonnaise if necessary to achieve a cohesive mixture.
  4. Using a scoop, place some of the biscuit mix onto your floured hand and shape it into a cup-like form. Place a scoop of the crab mixture into the center of each biscuit cup.
  5. Cover the crab filling with additional biscuit dough, ensuring that the filling is sealed within the biscuit.
  6. Place each biscuit into the prepared muffin trays.
  7. Bake for 12 to 15 minutes, or until the biscuits are golden brown.
  8. While the biscuits are baking, mix the melted butter with the lemon juice. Once the biscuits are done, brush the lemon butter mixture over the tops.
