Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter
Ingredients
- 1 package Cheddar Bay Biscuit Mix
- 1 tsp garlic powder
- 1 tsp Italian seasoning
For the Crab Filling:
- 1 pound lump crab meat (fully cooked)
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup + 2 tbsp mayonnaise
- 1 tbsp mustard
- ½ sleeve Ritz crackers, crushed
- 1 cup grated Parmesan cheese
For the Lemon Butter:
- 2 tbsp melted butter
- 1 tsp lemon juice
Instructions
- Prepare the Cheddar Bay Biscuit Mix according to the package instructions and set aside.
- Preheat your oven to 375°F (190°C) and spray two muffin tins with nonstick spray.
- In a bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise, and crushed crackers. Mix well, adding a bit more mayonnaise if necessary to achieve a cohesive mixture.
- Using a scoop, place some of the biscuit mix onto your floured hand and shape it into a cup-like form. Place a scoop of the crab mixture into the center of each biscuit cup.
- Cover the crab filling with additional biscuit dough, ensuring that the filling is sealed within the biscuit.
- Place each biscuit into the prepared muffin trays.
- Bake for 12 to 15 minutes, or until the biscuits are golden brown.
- While the biscuits are baking, mix the melted butter with the lemon juice. Once the biscuits are done, brush the lemon butter mixture over the tops.
