Creamy Bacon Chicken Recipe

Ingredients:

  • 6 strips of bacon, cut into small pieces
  • 2 large chicken breasts, halved lengthwise
  • Flour for dredging
  • 1/4 teaspoon garlic powder
  • Pepper to taste
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1 tablespoon butter
  • 1 cup heavy/whipping cream

Instructions:

  1. Prepare the Bacon: Begin by cutting the bacon into small pieces using kitchen shears for efficiency. Fry the bacon in a skillet over medium-high heat until it becomes crispy, which should take about 10 minutes. Once the bacon is ready, remove it from the pan and set it aside, leaving about 2 tablespoons of bacon fat in the pan for added flavor.
  2. Prepare the Chicken: While the bacon is cooking, prepare the chicken breasts by cutting them in half lengthwise to create 4 smaller cutlets. Sprinkle the cutlets with garlic powder and pepper, then lightly dredge them in flour, ensuring an even coating.
  3. Cook the Chicken: Place the chicken cutlets in the skillet with the remaining bacon fat. Cook over medium-high heat for approximately 4-5 minutes per side, or until the chicken is golden brown. If the oil begins to splatter excessively, reduce the heat slightly. Once browned, remove the chicken from the pan and set it aside.
  4. Prepare the Sauce: To the same skillet, add the chicken broth, lemon juice, and butter. Allow the mixture to bubble and reduce by half, which should take about 3-4 minutes.
  5. Combine and Finish: Stir in the heavy cream and bring the mixture to a gentle simmer. Once the sauce starts to bubble, return the chicken and bacon to the pan. Cook for an additional 5 minutes, or until the chicken is fully cooked through and the sauce has thickened to your desired consistency.
