Ingredients:

  • 3 cups leftover stuffing
  • 2 cups cooked turkey, shredded or finely chopped
  • 1/2 cup cranberry sauce (optional, for added flavor)
  • 1/2 cup grated mozzarella or cheddar cheese (optional, for added creaminess)
  • 1/4 cup turkey gravy (or chicken broth, as needed for moisture)
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 cup seasoned breadcrumbs
  • Vegetable or canola oil, for frying
  • Fresh parsley, finely chopped (optional, for garnish)

Instructions:

1. Prepare the Mixture:

In a large mixing bowl, combine the leftover stuffing, shredded turkey, cranberry sauce (if using), and grated cheese. Gradually add the turkey gravy or chicken broth until the mixture is moist enough to hold together when pressed. If the mixture is too dry, add more gravy; if too wet, incorporate additional stuffing or breadcrumbs.

2. Form the Balls:

Using your hands or a cookie scoop, shape the mixture into golf ball-sized portions, pressing firmly to ensure they hold their shape. Place the formed balls onto a parchment-lined baking sheet.

3. Set Up the Dredging Station:

Arrange three shallow bowls: one with flour, another with the beaten eggs, and the third with the seasoned breadcrumbs. Dredge each ball in flour, dip in the beaten eggs, and then roll in breadcrumbs, pressing gently to ensure they adhere.

4. Chill the Balls:

For best results, refrigerate the coated stuffing balls for 15-20 minutes. This helps them firm up, reducing the likelihood of breaking apart during frying.

5. Fry the Balls:

Heat about 2 inches of oil in a deep skillet or pot over medium heat until it reaches 350°F (175°C). Fry the balls in batches, cooking until golden and crispy on all sides, approximately 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

6. Alternative Baking Method:

For a lighter option, preheat your oven to 400°F (200°C). Place the balls on a greased baking sheet, lightly spray with cooking oil, and bake for 20-25 minutes until golden and heated through.

7. Serve:

Serve the turkey and stuffing balls warm with turkey gravy, cranberry sauce, or your favorite dipping sauce. Garnish with chopped parsley for a fresh touch.
