Ingredients:
- 3 tablespoons butter
- 2 lbs sirloin beef tips
- 2 tablespoons all-purpose flour
- 1 white onion, diced
- 8 oz sliced cremini mushrooms
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 beef bouillon cube
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1/2 cup sliced pepperoncinis
- 1 1/2 – 2 cups beef stock
- 2 tablespoons cornstarch
- Kosher salt and freshly ground black pepper, to taste
Instructions:
1. Prepare the Beef:
Season the beef tips generously with salt and pepper. Toss the seasoned beef in all-purpose flour, ensuring each piece is well-coated.
2. Sear the Beef:
Heat a large skillet over medium-high heat (or use the sauté function on your Instant Pot). Melt the butter, and in batches, sear the beef tips until they are browned and develop a crust on all sides. Remove the beef from the skillet and set aside on a plate.
3. Cook the Onions:
In the same skillet, add the diced onions. Sauté for about 2 minutes, scraping up any browned bits from the bottom of the pan with a wooden spoon.
4. Slow Cooker Instructions:
Transfer the seared beef and sautéed onions to the slow cooker. Add the sliced cremini mushrooms, garlic powder, onion powder, thyme, rosemary, beef bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and 2 cups of beef stock. Cover and cook on high for 3-4 hours or low for 6-7 hours until the beef is tender.
5. Thicken the Gravy:
About 30 minutes before the cooking time is done, whisk the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir this cornstarch mixture into the slow cooker, cover, and let it cook for the remaining 30 minutes until the gravy thickens.
