Cheesy Chicken Fritters

Ingredients for Chicken Fritters:

  • 1 ½ lbs chicken breasts (about 3 large pieces)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (use cornstarch or potato starch for a gluten-free option)
  • 4 oz mozzarella cheese (about 1 ⅓ cups shredded)
  • 1 ½ Tbsp chopped fresh dill
  • ½ tsp salt (or to taste)
  • 1/8 tsp black pepper
  • 2 Tbsp extra light olive oil (or any high-heat cooking oil) for sautéing

Ingredients for Garlic Aioli Dip (Optional):

  • 1/3 cup mayonnaise
  • 1 garlic clove, pressed
  • ½ Tbsp lemon juice
  • ¼ tsp salt
  • 1/8 tsp black pepper

Instructions:

1. Prepare the Chicken Fritters:

Using a sharp knife, dice the chicken breasts into 1/3″ thick pieces and place them in a large mixing bowl.
(Tip: If the chicken breasts are partially frozen, they will be easier to slice.)
Add the remaining batter ingredients to the bowl: eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and pepper.
Mix well until fully combined. Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or overnight to allow the flavors to meld.

2. Cook the Fritters:

Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil. Once the oil is hot, scoop a heaping tablespoon of the chicken mixture into the pan. Use the back of your spoon to gently flatten the tops.
Sauté the fritters uncovered for 3-4 minutes on the first side, then flip and cook for another 3 minutes on the second side, or until the fritters are golden brown and the chicken is cooked through. Repeat with the remaining mixture, adding more oil as needed.

3. Test for Doneness:

To ensure the fritters are fully cooked, cut one in half; the chicken should be completely white inside. If the fritters are browning too quickly, lower the heat slightly.

4. Make the Garlic Aioli Dip (Optional):

In a small bowl, combine mayonnaise, pressed garlic, lemon juice, salt, and pepper. Stir together until smooth.

Recipe Notes:

Serve the cheesy chicken fritters hot, accompanied by the optional garlic aioli dip for an extra burst of flavor. These fritters make for a delicious appetizer or a quick and satisfying meal!
