Ingredients:
- 2 cups thinly sliced Yellow Sweet Onions
- 2 tablespoons Butter
- 1 can (15-ounce) Chicken Broth
- 1/4 teaspoon Salt
- 1/4 teaspoon freshly ground Black Pepper
- 2 Chicken Bouillon Cubes
- 1/4 cup Velveeta Cheese (cubed or shredded)
- 1 1/2 to 1 3/4 cups Thick White Sauce (recipe below)
- Shredded Cheddar Cheese for garnish
White Sauce Ingredients:
- 3 tablespoons Butter
- 3 tablespoons Flour
- 1/4 teaspoon Salt
- 1 1/2 cups Whole Milk
How to Make French Onion Soup:
White Sauce:
- In a 1-quart saucepan, melt the butter over medium heat.
- Add the flour and cook until the mixture thickens and pulls away from the sides of the pan.
- Gradually pour in the milk, stirring constantly to prevent lumps. Add the salt.
- Continue stirring until the sauce thickens to a pudding-like consistency. Set aside, keeping it off the heat until needed for the soup.
Soup:
- In a 2-quart saucepan, melt 3 tablespoons of butter over medium-low heat. Add the sliced onions and cook, stirring frequently, until soft and translucent but not browned.
- Add the chicken broth, chicken bouillon cubes, salt, and pepper. Stir the mixture until fully heated.
- Incorporate the white sauce and Velveeta cheese into the soup. The white sauce will be thick due to cooling, so stir gently over medium-low heat until the cheese melts and all ingredients blend smoothly.
- Lower the heat to a warm setting and let the soup simmer for an additional 30 to 45 minutes, stirring occasionally.
Serving:
Serve hot, garnished with shredded cheddar cheese, alongside slices of warm dark Russian bread.
