Creamed Chicken and Biscuits Casserole Recipe
Ingredients
- 1 ½ tsp butter
- 1 small onion, chopped
- 2 pounds of cooked chicken, cut or shredded
- 1 can of cream of chicken soup
- ½ cup mayonnaise
- 1 cup milk
- ½ cup roasted red pepper, chopped
- 1 ½ cups mild cheddar cheese, shredded
- 1 can refrigerated biscuit dough
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Grease the bottom and sides of a baking dish to prevent sticking.
- Step 2: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until it softens and becomes translucent.
- Step 3: In a large mixing bowl, combine the cooked chicken, sautéed onion, cream of chicken soup, mayonnaise, milk, and roasted red pepper. Stir until well mixed. Pour this mixture into the greased baking dish, spreading it evenly.
- Step 4: Bake the mixture in the preheated oven for 15 minutes. Remove the dish from the oven and sprinkle 1 cup of cheddar cheese over the chicken mixture. Arrange the biscuit dough pieces over the cheese layer.
- Step 5: Top the biscuits with the remaining ½ cup of cheese. Place the dish back in the oven and bake for an additional 20 minutes or until the biscuits are golden brown and fully cooked.
- Step 6: Allow the casserole to sit for a few minutes before serving, letting the flavors settle.
Serve on its own or pair it with a fresh dinner salad for a balanced meal. Enjoy!
