Chicken Parmesan Grilled Cheese Sandwich
Ingredients:
- 2 slices of bread (sourdough or any sturdy bread of your choice)
- 1 cup cooked chicken breast, shredded or sliced
- 1/2 cup marinara sauce
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil or butter
- 1/2 teaspoon dried basil (optional)
- 1/2 teaspoon garlic powder (optional)
Instructions:
- Prepare the Chicken: If not already done, cook the chicken breast and shred or slice it. Leftover chicken can work well, or cook it fresh, seasoning with salt and pepper to taste.
- Assemble the Sandwich:
- Spread a thin layer of marinara sauce on one side of each slice of bread.
- Place the shredded chicken on top of the sauce on one bread slice.
- Sprinkle Parmesan cheese and mozzarella cheese over the chicken.
- For added flavor, you may sprinkle dried basil and garlic powder over the cheese.
- Place the second bread slice on top, with the sauce side facing down.
- Cook the Sandwich:
- Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter, adding more if a crispier crust is desired.
- Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, approximately 3-4 minutes per side. Press gently with a spatula for even grilling.
- Serve: Remove the sandwich from the skillet and let it cool slightly before slicing. Serve hot for the best flavor.
