Crispy Cheese Mashed Potato Puffs

This recipe is absolutely amazing! Turn your leftover mashed potatoes into delicious crispy cheese puffs that are perfect for a quick snack, a light meal, or even as an appetizer. With the addition of your favorite cheese and some seasoning, you’ll elevate a classic dish into something extraordinary.

Ingredients:

  • 3 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1/3 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped green onions
  • 2 large eggs, whisked
  • Sea salt, to taste

Instructions:

  1. In a large bowl, combine the mashed potatoes, flour, sour cream, Parmesan cheese, and chopped green onions. Mix well until the ingredients are fully incorporated.
  2. Add the whisked eggs to the mixture, stirring until you get a smooth, consistent batter.
  3. Season the mixture with sea salt to your taste.
  4. Preheat a non-stick skillet or frying pan over medium heat and lightly grease it with oil or butter.
  5. Using a spoon or ice cream scoop, portion out the potato mixture into small balls and place them gently into the pan. Flatten them slightly with a spatula to form patties.
  6. Cook the puffs for 3–4 minutes on each side, or until they are golden brown and crispy.
  7. Remove from the pan and place on a paper towel to drain any excess oil.
  8. Serve hot and enjoy!

These crispy cheese mashed potato puffs are best served fresh, but they can also be reheated in the oven for later use.
