Crispy Cheese Mashed Potato Puffs
This recipe is absolutely amazing! Turn your leftover mashed potatoes into delicious crispy cheese puffs that are perfect for a quick snack, a light meal, or even as an appetizer. With the addition of your favorite cheese and some seasoning, you’ll elevate a classic dish into something extraordinary.
Ingredients:
- 3 cups mashed potatoes
- 1 cup all-purpose flour
- 1/3 cup sour cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped green onions
- 2 large eggs, whisked
- Sea salt, to taste
Instructions:
- In a large bowl, combine the mashed potatoes, flour, sour cream, Parmesan cheese, and chopped green onions. Mix well until the ingredients are fully incorporated.
- Add the whisked eggs to the mixture, stirring until you get a smooth, consistent batter.
- Season the mixture with sea salt to your taste.
- Preheat a non-stick skillet or frying pan over medium heat and lightly grease it with oil or butter.
- Using a spoon or ice cream scoop, portion out the potato mixture into small balls and place them gently into the pan. Flatten them slightly with a spatula to form patties.
- Cook the puffs for 3–4 minutes on each side, or until they are golden brown and crispy.
- Remove from the pan and place on a paper towel to drain any excess oil.
- Serve hot and enjoy!
These crispy cheese mashed potato puffs are best served fresh, but they can also be reheated in the oven for later use.
