Ingredients
For the Cookie Base:
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/4 tsp salt
For the Pecan Filling:
- 1/4 cup brown sugar, packed
- 1/4 cup corn syrup or maple syrup
- 1 tbsp unsalted butter, melted
- 1/2 cup chopped pecans
- 1/4 tsp vanilla extract
Directions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the Cookie Dough:
- Cream the softened butter and granulated sugar until light and fluffy.
- Add the egg yolk and vanilla extract, mixing until combined.
- Gradually mix in the flour and salt until a soft dough forms.
- Shape the Cookies:
- Roll about 1 tablespoon of dough into a ball and place it on the baking sheet.
- Space the cookies 2 inches apart and make a small indentation in the center of each using your thumb or a spoon.
- Prepare the Pecan Filling:
- Mix the brown sugar, corn syrup (or maple syrup), melted butter, chopped pecans, and vanilla extract in a small bowl.
- Fill the Cookies: Spoon about 1/2 teaspoon of the pecan filling into the indentation of each cookie.
- Bake:
- Bake the cookies for 10–12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
