Ingredients:

  • 1 large block of Velveeta cheese, cubed
  • 1 (8 oz) block of cream cheese, softened
  • 1 can of cream of chicken soup
  • 1 can of Rotel tomatoes with chilies, undrained
  • 2.25 pounds of ground beef
  • 1 box of bowtie pasta (farfalle)
  • (Optional) 1 cup of reserved pasta water, to adjust sauce consistency

Instructions:

  1. Cook the Pasta:

    Begin by bringing a large pot of salted water to a boil. Add the bowtie noodles and cook them according to the package instructions, aiming for an al dente texture. Before draining, reserve 1 cup of pasta water. Once cooked, drain the noodles and set them aside.

  2. Brown the Ground Beef:

    In a large skillet, heat over medium. Add the ground beef and cook until browned, breaking it apart into smaller pieces as it cooks. If there is excess fat, drain it off.

  3. Prepare the Sauce:

    Add the cubed Velveeta, softened cream cheese, cream of chicken soup, and undrained Rotel tomatoes to the skillet with the browned beef. Stir everything together over medium heat until the cheeses melt and the mixture becomes a creamy, cohesive sauce.

  4. Combine Pasta and Sauce:

    Once the sauce has reached a smooth and creamy consistency, add the cooked bowtie noodles to the skillet. Toss gently to coat the pasta evenly with the sauce. If the sauce is too thick, gradually add the reserved pasta water until the desired creamy consistency is achieved.
