  • 1 pound ground beef
  • 2 bell peppers, chopped

  • 1 (15 oz) can diced tomatoes
  • 1 cup uncooked long-grain white rice

  • 3/4 cup mozzarella cheese, shredded
  • 3/4 cup cheddar cheese, shredded

Instructions:

  1. In a large skillet, cook the ground beef over medium heat, breaking it apart into small pieces. Once mostly cooked, add the chopped onions and bell peppers. Cook for 5-10 minutes until the vegetables begin to soften.
  2. Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  3. Mix in the Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 20 minutes, stirring halfway through, until the rice is tender.
  5. Stir in half of the shredded mozzarella and cheddar cheese until melted and fully incorporated.
  6. Sprinkle the remaining cheese on top, cover, and allow the cheese to melt. For a quicker method, place the skillet under the broiler if oven-safe.
  7. Remove from heat and serve immediately. Pair with a side salad or crusty bread for a complete meal.
