Pineapple Chicken and Rice

A sweet and savory tropical dish.

Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 can (15 oz) pineapple chunks, drained
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked rice

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned. Remove from the skillet and set aside.
  2. Sauté the Onion: In the same skillet, add the chopped onion and cook until softened.
  3. Add the Pineapple and Sauce: Stir in the pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Let the mixture simmer for a few minutes.
  4. Combine Everything: Return the cooked chicken to the skillet and toss to coat evenly. Cook for another few minutes until well combined.
  5. Serve and Enjoy: Serve over cooked rice and enjoy!

Tips

  • For a spicier dish, add more red pepper flakes.
  • Try adding bell peppers or cashews for extra crunch.
  • Serve with a side salad or steamed vegetables for a balanced meal.
