Ingredients

For the Cookie Cups:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup chocolate chips (divided)

For the Peanut Butter Filling:

  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
  4. Add the vanilla extract and egg, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in 1/2 cup of chocolate chips.
  7. Scoop the dough into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 10-12 minutes, until the edges are golden brown. Let cool for 5 minutes.
  9. Mix the peanut butter and powdered sugar until smooth.
  10. Gently press the center of each cookie cup to create space for the filling.
  11. Fill each cup with the peanut butter mixture and sprinkle the remaining chocolate chips on top.
  12. Optional: Melt extra chocolate and drizzle over the cups.
  13. Chill for 10-15 minutes before serving. Enjoy!
