The perfect fusion of two comforting classics—banana bread and snickerdoodle cookies—this moist, flavorful loaf is topped with a sweet cinnamon-sugar crust that adds just the right amount of crunch.

Ingredients

For the Banana Bread:

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon

For the Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the Wet Ingredients: In a large mixing bowl, mash the ripe bananas. Stir in the melted butter, then the vanilla extract and egg. Mix until smooth.
  3. Add Sugars and Dry Ingredients: Stir in both sugars, baking soda, salt, cream of tartar, and cinnamon until well blended.
  4. Fold in the Flour: Gently fold in the flour just until combined. Do not overmix.
  5. Prepare the Topping: In a small bowl, combine the cinnamon and sugar.
  6. Assemble the Loaf: Pour half the batter into the pan, sprinkle with half the cinnamon-sugar topping. Add the rest of the batter, and sprinkle the remaining topping on top.
  7. Bake: Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
  8. Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
