Snickerdoodle Banana Bread
The perfect fusion of two comforting classics—banana bread and snickerdoodle cookies—this moist, flavorful loaf is topped with a sweet cinnamon-sugar crust that adds just the right amount of crunch.
Ingredients
For the Banana Bread:
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon vanilla extract
- 1 large egg
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup all-purpose flour
- 1 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
For the Topping:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
- Prepare the Wet Ingredients: In a large mixing bowl, mash the ripe bananas. Stir in the melted butter, then the vanilla extract and egg. Mix until smooth.
- Add Sugars and Dry Ingredients: Stir in both sugars, baking soda, salt, cream of tartar, and cinnamon until well blended.
- Fold in the Flour: Gently fold in the flour just until combined. Do not overmix.
- Prepare the Topping: In a small bowl, combine the cinnamon and sugar.
- Assemble the Loaf: Pour half the batter into the pan, sprinkle with half the cinnamon-sugar topping. Add the rest of the batter, and sprinkle the remaining topping on top.
- Bake: Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if the top browns too quickly.
- Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
