Irresistibly Easy Two-Ingredient Pumpkin Cake with Apple Cider Glaze

This crowd-pleasing pumpkin cake is so simple, it’s almost hard to believe. With just two main ingredients—pumpkin purée and spice cake mix—you can whip up a moist, flavorful dessert in no time. The tangy apple cider glaze adds a delicious finishing touch, making it a seasonal favorite that’s perfect for any fall gathering.

Ingredients

For the Cake:

  • 1 can (15 oz) pumpkin purée
  • 1 box spice cake mix

For the Apple Cider Glaze:

  • 1 cup apple cider
  • 1 cup powdered sugar

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set it aside.
  2. Mix the Batter: In a large mixing bowl, combine the pumpkin purée and the spice cake mix. Stir until the mixture is smooth and fully blended.
  3. Bake: Spread the batter evenly in the prepared baking dish. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Make the Glaze: While the cake is baking, whisk together the apple cider and powdered sugar in a small bowl until smooth.
  5. Glaze the Cake: Let the cake cool in the pan for about 10 minutes, then drizzle the glaze evenly over the warm cake.
  6. Serve: Allow the glaze to set before slicing. Serve warm or at room temperature for a delicious treat.

Tip: For extra flair, top with a dollop of whipped cream or sprinkle with chopped pecans!
