Instructions
1. Prepare the Meatloaf:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until softened and fragrant.
- In a large mixing bowl, combine the ground beef, breadcrumbs, tomato sauce, egg, BBQ sauce, sautéed onion and garlic, peas, parsley, salt, and pepper. Mix thoroughly.
- Transfer the meat mixture to a loaf pan or form it into a loaf shape on a parchment-lined baking sheet.
- Bake for 45–50 minutes, or until the internal temperature reaches 160°F (70°C).
2. Make the Mashed Potatoes:
- While the meatloaf is baking, place the peeled and chopped potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot.
