Ingredients

  • 1 pound ground beef
  • 2 cups potatoes, peeled and sliced
  • 2 cups celery, finely chopped
  • ½ cup carrots, finely chopped
  • ¼ cup green bell peppers, finely chopped
  • ¼ cup onions, finely chopped
  • 2 tablespoons butter or margarine
  • 1 cup water
  • 2 (10.75-ounce) cans condensed cream of mushroom soup (undiluted)
  • 1 (5-ounce) can chow mein noodles
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. In a skillet over medium heat, brown the ground beef. Drain the fat and set aside.
  3. In the same skillet, melt butter and sauté potatoes, celery, carrots, green bell peppers, and onions for 5 minutes, stirring occasionally.
  4. Add water, cover the skillet, and simmer for 10 minutes until the potatoes are slightly tender.
  5. In a large bowl, combine the cooked beef, undiluted mushroom soup, and sautéed vegetables with their liquid. Stir until well mixed.
  6. Place half of the chow mein noodles at the bottom of the baking dish. Spread the beef-vegetable mixture evenly over the noodles.
  7. Cover the dish with foil and bake for 20 minutes.
  8. Remove foil, sprinkle with shredded cheddar cheese and remaining chow mein noodles.
  9. Bake uncovered for an additional 10–12 minutes, or until the cheese is bubbly and the noodles are crisp and golden.
  10. Let sit for a few minutes before serving. Enjoy!

Tip: Serve with a fresh salad or warm dinner rolls for a complete meal.
