Ingredients

Ingredient Quantity
Cream of chicken soup 10.5 ounces
Cream of mushroom soup 10.5 ounces
Rotel diced tomatoes with chilies (undrained) 10 ounces
Cream cheese (cubed) 4 ounces
Italian seasoning 2 tablespoons
Boneless skinless chicken breasts 1.5 pounds
Spaghetti 12 ounces
Shredded mozzarella and cheddar cheese blend 2 cups

Instructions

  1. Prepare the Crockpot: Thoroughly spray the inside of your crockpot with non-stick cooking spray to prevent sticking.
  2. Make the Soup Base: Add the cream of chicken soup and cream of mushroom soup to the crockpot.
    Stir in the undrained Rotel diced tomatoes, cubed cream cheese, and Italian seasoning until well combined.
  3. Add the Chicken: Place the boneless, skinless chicken breasts into the crockpot, ensuring they are fully submerged in the soup mixture.
  4. Cook: Cover with the lid and cook on LOW for four hours.
  5. Prepare the Pasta: While the chicken is cooking, boil the spaghetti according to package directions until al dente. Drain and set aside.
  6. Shred the Chicken: Remove the chicken breasts from the crockpot and shred into bite-sized pieces using two forks.
  7. Combine Ingredients: Return the shredded chicken to the crockpot. Add the cooked spaghetti and stir to coat the pasta evenly with the sauce.
  8. Add Cheese: Sprinkle the shredded mozzarella and cheddar cheese blend over the mixture and stir to incorporate.
  9. Final Cook: Cover and cook on LOW for an additional 30 minutes until the cheese melts.
