Introduction

and tender on the inside, these fritters are packed with sweet corn flavor and a hint of savory seasoning.

Ingredients

  • 1 cup fresh or canned corn kernels (drained if canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal (optional for extra crunch)
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1/4 cup milk
  • 1/2 tsp baking powder
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp paprika or chili powder (optional)
  • 2-3 tbsp vegetable oil (for frying)

Instructions

  1. Prepare the batter: In a mixing bowl, combine the flour, cornmeal, baking powder, salt, pepper, and paprika.
  2. Add wet ingredients: Stir in the egg and milk until smooth. Then fold in the corn kernels and chopped onion.
  3. Heat the oil: Place a non-stick skillet over medium heat and add 2 tablespoons of vegetable oil.
  4. Fry the fritters: Scoop 2-3 tablespoons of batter per fritter and carefully drop into the hot pan. Flatten slightly with the back of the spoon.
  5. Cook until golden: Fry for 2-3 minutes on each side or until golden brown and cooked through. Adjust heat as necessary.
  6. Drain: Transfer the cooked fritters to a paper towel-lined plate to remove excess oil.
