Famous Red Lobster Shrimp Scampi
Ingredients
- 1 lb medium shrimp, peeled and deveined
 - 1 tablespoon pure olive oil
 - 2 tablespoons finely chopped garlic
 - 1 1/2 cups white wine (Chardonnay recommended)
 - Juice of 1/2 fresh lemon
 - 1 teaspoon Italian seasoning
 - 1/2 cup softened butter
 - 1 tablespoon parsley
 - 1/2 cup grated Parmesan cheese
 
Preparation
- Heat a cast iron skillet and add the olive oil.
 - Add the shrimp and cook until tender and opaque. Remove the shrimp and set aside.
 - Add the garlic to the skillet and cook for 2-3 minutes, ensuring it does not brown to avoid bitterness.
 - Pour in the white wine and lemon juice.
 - Cook until the wine reduces by half, then add the Italian seasoning.
 - Lower the heat and add the butter. Ensure the pan isn’t too hot to prevent the butter from separating.
 - Return the shrimp to the skillet, add the parsley, and season with salt and pepper to taste.
 - Sprinkle the dish with grated Parmesan cheese before serving.
