Instructions

  1. Prepare the crust:

    Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter.
    Press the mixture into a 9-inch pie pan evenly. Bake for 8–10 minutes until lightly golden. Let cool completely.

  2. Make the filling:

    In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually add milk, stirring until smooth.
    Cook over medium heat, stirring constantly, until thickened and boiling. Remove from heat. Slowly whisk a small amount into the beaten egg yolks,
    then return the mixture to the pan. Cook 1–2 minutes more, stirring constantly. Stir in butter and vanilla extract until smooth.

  3. Assemble the pie:

    Layer sliced bananas on the cooled crust. Pour the warm filling over the bananas evenly.
    Let the pie cool to room temperature, then refrigerate for at least 2 hours.

  4. Add toppings:

    Spread whipped cream on top and garnish with extra banana slices or chocolate/caramel drizzle as desired before serving.
