Introduction

Ingredients

For the Chicken & Potatoes

  • 4 chicken thighs or breasts (bone-in or boneless)
  • 1 lb (450 g) baby potatoes, halved
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 1 tbsp lemon juice (optional)
  • 2 tbsp butter

Instructions

  1. Lightly grease the slow cooker or insert a liner.
  2. Add the potatoes and onions to the bottom of the slow cooker.
  3. Mix olive oil, garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture all over the chicken.
  4. Place the seasoned chicken over the vegetables.
  5. Pour chicken broth (and lemon juice if using) around the chicken.
  6. Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  7. Add butter during the last 20 minutes of cooking.
  8. Serve hot, spooning herb-infused broth over the chicken and potatoes.

Correction

If the dish is too watery, remove the chicken and potatoes and simmer the liquid on the stove
for 5–7 minutes to thicken. You can also add a cornstarch slurry (1 tsp cornstarch mixed with
cold water).
If it’s too salty, add a splash of water, more potatoes, or a squeeze of lemon juice.
