Ingredients

For the Meatloaf:

  • 2 large eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup (mixed into the meatloaf)

For the Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp mustard
  • 1 tsp Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan or baking dish with parchment or lightly grease it.
  2. In a large bowl, combine ground beef, crushed Ritz crackers, onion, bell pepper, eggs, milk, Worcestershire sauce, garlic powder, salt, pepper, and 1/2 cup ketchup. Mix gently until fully combined.
  3. Shape into a loaf in the pan or on a baking sheet for crispier edges.
  4. Prepare the glaze by mixing ketchup, brown sugar, mustard, and optional Worcestershire.
  5. Spread half the glaze over the loaf and bake for 45 minutes.
  6. Brush the remaining glaze on top and continue baking for 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Allow the meatloaf to rest for 10 minutes before slicing.
