gatherings, or whenever you crave classic baked pasta comfort.

Ingredients

  • 400 g (14 oz) pasta (penne, rigatoni, or fusilli)
  • 300 g (10 oz) sausage, casings removed
  • 250 g (9 oz) mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 2 tablespoons all-purpose flour
  • 2 cups warm milk
  • ½ cup cooking cream (optional)
  • 1 cup grated mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ½ teaspoon dried thyme or oregano
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water until just al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned.
  3. Add the chopped onion and cook until softened. Stir in garlic and mushrooms and cook until golden.
  4. Sprinkle flour over the mixture and stir well. Gradually add warm milk, stirring constantly until thickened.
  5. Add cream if using, then season with salt, pepper, and dried herbs.
  6. Mix the cooked pasta into the sauce and stir in half of the grated cheese.
  7. Transfer to a greased baking dish and top with remaining cheese.
  8. Bake at 180°C (350°F) for 25–30 minutes, until bubbly and golden.
  9. Let rest for 5 minutes before serving.

Description

This pasta gratin delivers rich, savory flavors with tender pasta coated in a creamy sauce,
balanced by the robust taste of sausage and the earthiness of mushrooms. The baked cheese
topping creates a golden crust that contrasts beautifully with the soft, comforting interior.

Tips

  • Use spicy sausage for added heat or chicken sausage for a lighter option.
  • Add spinach, peas, or bell peppers for extra color and nutrition.
  • For a crunchy topping, sprinkle buttered breadcrumbs over the cheese.
  • Allow the gratin to rest before serving so it sets properly.

Correction

  • Sauce too thick: Stir in a little extra milk before baking.
  • Dry gratin: Ensure the pasta is fully coated with sauce.
  • Overcooked pasta: Always cook pasta just al dente.
  • Lack of flavor: Season each step and use flavorful sausage.

Enjoy

Serve your Oven-Baked Sausage and Mushroom Pasta Gratin with a crisp green salad or crusty bread.
This warm, cheesy dish is comfort food at its finest. Enjoy every bite!
