Introduction

Spinach Stuffed Meatloaf is a comforting twist on the classic meatloaf, filled with a flavorful
layer of sautéed spinach and melted cheese. Juicy on the outside and rich on the inside, this
dish turns a simple family favorite into something extra special—perfect for weeknight dinners
or Sunday meals.

Ingredients

For the Meatloaf:

  • 1½ lbs (700 g) ground beef (or beef and pork mix)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning

For the Spinach Filling:

  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella or provolone cheese
  • ¼ cup grated Parmesan cheese

For the Topping:

  • ¼ cup ketchup
  • 1 tbsp brown sugar (optional)

Instructions

  1. Prepare the Spinach Filling:
Heat olive oil in a pan over medium heat. Sauté spinach for 2–3 minutes until wilted.
Remove from heat and allow to cool slightly.
  2. Make the Meatloaf Mixture:
In a large bowl, combine ground meat, breadcrumbs, onion, garlic, eggs, milk, ketchup,
Worcestershire sauce, salt, pepper, paprika, and Italian seasoning. Mix gently until
    just combined.
  3. Assemble the Meatloaf:
Place the meat mixture on parchment paper and flatten into a rectangle about ¾-inch thick.
Spread the spinach evenly over the center and sprinkle with mozzarella and Parmesan cheese.
  4. Roll and Seal:
Carefully roll the meatloaf jelly-roll style, sealing the edges to keep the filling inside.
Place seam-side down in a greased baking dish.
  5. Add the Topping:
Mix ketchup and brown sugar, then spread evenly over the top of the meatloaf.
  6. Bake:
Bake at 375°F (190°C) for 50–60 minutes, or until the internal temperature reaches
    160°F (71°C).
  7. Rest and Slice:
Let the meatloaf rest for 10 minutes before slicing to keep it juicy.

Description

sweet and tangy finish. Each slice reveals a beautiful swirl that makes this dish both hearty
and visually appealing.

Tips

  • Use parchment paper to make rolling the meatloaf easier.
  • Avoid overmixing the meat to keep the texture tender.
  • Add red pepper flakes to the spinach for a little heat.
  • Serve with mashed potatoes, roasted vegetables, or a fresh salad.

Correction / Substitutions

  • Squeeze excess moisture from spinach before using to avoid a soggy center.
  • Ground turkey or chicken can be used instead of beef—add extra milk for moisture.
  • Use gluten-free breadcrumbs if needed.
  • If cheese leaks slightly during baking, spoon it back over slices when serving.
