Italian-Style Drunken Noodles

Introduction

Italian-Style Drunken Noodles are a bold and flavorful fusion dish inspired by classic Italian pasta
and the concept of “drunken” cooking, where wine enhances and deepens the flavors. This hearty recipe
combines savory Italian sausage, fresh vegetables, garlic, herbs, and a splash of wine to create a
comforting and satisfying meal. It’s perfect for busy weeknights yet impressive enough for special
occasions.

Ingredients

  • 12 oz wide pasta (pappardelle, fettuccine, or linguine)
  • 2 tablespoons olive oil
  • 12 oz Italian sausage (mild or spicy), sliced or crumbled
  • 1 small onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil or Italian seasoning
  • ½ cup dry red or white wine
  • 1 cup crushed tomatoes or tomato sauce
  • Salt and black pepper, to taste
  • ½ cup fresh basil leaves, torn
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta
according to package instructions until al dente. Reserve ½ cup of pasta water, then drain.
  2. Brown the Sausage: Heat olive oil in a large skillet over medium-high heat.
Add the Italian sausage and cook until browned and fully cooked. Drain excess grease if needed.
  3. Sauté the Vegetables: Add the onion and bell peppers to the skillet. Cook for
4–5 minutes until softened. Stir in the garlic and cook for about 30 seconds until fragrant.
  4. Build the Flavor: Add red pepper flakes, oregano, basil, salt, and black pepper.
Pour in the wine and let it simmer for 2–3 minutes to cook off the alcohol.
  5. Add the Sauce: Stir in the crushed tomatoes and simmer for about 5 minutes.
If the sauce becomes too thick, add a little reserved pasta water.
  6. Combine and Finish: Add the cooked pasta to the skillet and toss until evenly
coated. Stir in fresh basil and adjust seasoning as needed.

Description

Italian-Style Drunken Noodles are rich, savory, and slightly spicy, featuring tender pasta coated in
a wine-infused tomato sauce. The Italian sausage provides depth and heartiness, while fresh basil
adds a bright, aromatic finish. This dish delivers rustic comfort with restaurant-quality flavor.

Tips

  • Use spicy Italian sausage for extra heat.
  • White wine creates a lighter sauce, while red wine adds richness.
  • Fresh herbs provide the best flavor, but dried herbs work well too.
  • Add mushrooms, zucchini, or spinach for more vegetables.

Correction (Common Mistakes & Fixes)

  • Sauce too acidic: Add a pinch of sugar or a splash of cream.
  • Pasta too dry: Mix in reserved pasta water a little at a time.
  • Overcooked pasta: Cook only until al dente; it will finish cooking in the sauce.
  • Too spicy: Reduce red pepper flakes or balance with extra cheese.

Enjoy
