Ingredients

  • 8 oz spaghetti (broken in half)
  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated mozzarella cheese
  • ½ cup milk
  • 1 small onion, finely chopped
  • 1 small bell pepper, chopped (optional)
  • 2 cloves garlic, minced

  • Salt and black pepper, to taste
  • ½ teaspoon paprika or Italian seasoning (optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a casserole dish and set aside.
  2. Cook the spaghetti in salted boiling water until just al dente. Drain and set aside.
  3. In a skillet, heat butter or olive oil over medium heat. Sauté the onion and bell pepper until soft,
    then add the garlic and cook for 30 seconds.
  4. In a large bowl, mix the cream of chicken soup, chicken broth, milk, salt, pepper, and seasoning.
  5. Add the cooked chicken, sautéed vegetables, spaghetti, and half of the cheeses. Stir until well combined.
  6. Transfer the mixture to the prepared casserole dish.
  7. Sprinkle the remaining cheese evenly over the top.
  8. Bake uncovered for 25–30 minutes, or until bubbly and lightly golden.
  9. Let rest for 5 minutes before serving.
