My Italian grandma taught me this method, and I’ve never stopped using it! This recipe combines simple ingredients with a slow cooker for a delicious, fuss-free side dish. Perfect for family dinners or gatherings, these Parmesan garlic baby potatoes are sure to impress.
Ingredients
- 2 pounds of baby potatoes, halved or quartered
- 1/4 cup olive oil
- 1 tablespoon Italian seasoning
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- Place the halved or quartered baby potatoes in your slow cooker.
- In a small bowl, mix the olive oil, Italian seasoning, minced garlic, Parmesan cheese, salt, and pepper.
- Pour the olive oil mixture over the potatoes and toss to coat them evenly.
- Cover the slow cooker and cook on low for 4-5 hours, or until the potatoes are tender and cooked through.
- Give the potatoes a good stir before serving, and sprinkle with freshly chopped parsley for a pop of color and added flavor.
