A Hearty Classic: Carne Guisada

Carne Guisada: A Hearty Latin American Stew
My mum made this dish all the time when I was growing up, and I have always loved it!
This Carne Guisada is a rich and comforting beef stew, a staple in Latin American cuisine. Tender chunks of stew meat are simmered in a flavorful tomato-based sauce with savory spices, making it perfect for serving over rice, mashed potatoes, or wrapped in a warm flour tortilla.
Ingredients
Ingredient | Quantity |
---|---|
Stew meat | 3 lbs |
Oil (lard, bacon grease, or vegetable oil) | 1 tablespoon |
Medium onion, diced | 1 |
Small green bell pepper (optional), diced | 1 |
Tomato sauce | 3 tablespoons |
Garlic powder | 1 teaspoon |
Ground cumin | 2 teaspoons |
Salt | 2 teaspoons |
Black pepper | ½ teaspoon |
All-purpose flour | 2 tablespoons |
Water or chicken stock | 1 cup |

Instructions
-
Brown the Meat and Sauté Aromatics:
In a large pan or Dutch oven, heat the oil over high heat. Add the stew meat, diced onion, and bell pepper (if using). Brown the meat on all sides and cook until the onion is softened, about 5–7 minutes. -
Add Flavorings:
Stir in the tomato sauce, garlic powder, ground cumin, salt, and black pepper. Mix well to evenly coat the meat and vegetables. -
Thicken with Flour and Add Liquid:
Sprinkle the flour over the meat and mix thoroughly to avoid lumps. Pour in the water or chicken stock and stir until a smooth sauce forms. -
Simmer:
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1½ hours, or until the meat is fork-tender and the flavors are fully developed. -
Adjust and Serve:
Taste and adjust seasoning if needed. Serve hot with flour tortillas, rice, or mashed potatoes.
