- 2 baking potatoes

Instructions
- Prep the Potatoes: Scrub the potatoes clean and slice them thinly, around ⅛ inch thick, using a mandolin for consistent slices.
- Soak the Slices: Place the potato slices in a bowl of cold water and let them soak for 15-30 minutes. This step helps remove excess starch, making them extra crispy. After soaking, drain the water and pat the slices dry with a towel.
- Preheat & Season: Preheat your air fryer to 370°F (187°C). Toss the dried potato slices with olive oil and season them with salt or your preferred seasonings.
- Air Fry the Chips: Arrange the potato slices in a single layer in the air fryer basket. Cook for 10 minutes, then toss the chips. Continue cooking for an additional 12-17 minutes, tossing every few minutes to ensure even cooking.
- Monitor Crispness: As the chips start to brown and crisp up, remove the ones that are ready to prevent burning. Continue cooking until all the chips are golden and crispy.
Notes:
- For the best results, use a mandolin or the slicing side of a box grater to achieve uniformly thin slices.
- Soaking the potato slices in cold water not only prevents discoloration but also helps create a crispier texture.
- Ensure the slices are completely dry before cooking to achieve maximum crispiness.
- Remove chips from the air fryer as soon as they become crisp and lightly browned to avoid overcooking.
Storage Tips:
- Store your homemade chips in a bowl at room temperature. To prevent them from softening, avoid sealing them in an airtight container. A paper bag with a clip works great for maintaining their crunch.
- If your chips lose their crispness, you can easily revive them by placing them back in the air fryer for a few minutes. Alternatively, you can place them in a single layer on a baking tray and broil them in the oven for 3-5 minutes.
