  • 225 g Self-Raising Flour
  • 50 g Butter (cubed)
  • 28 g Caster Sugar
  • 60 ml Whole Milk
  • Egg Wash (for brushing)
  • Extra Virgin Olive Oil Spray (for greasing)
  • Optional Toppings:
    • Squirty Cream
    • Fresh Strawberries
    • Strawberry Jam

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the flour and sugar. Add the cubed butter and rub it into the flour mixture using your fingertips until it resembles coarse breadcrumbs.
  2. Add Milk: Gradually add the milk to the mixture, stirring to form a soft dough. Roll the dough out on a floured surface to a thickness of about 1.5 cm. Thicker dough will result in taller scones.
  3. Cut and Arrange Scones: Using a round cutter, cut the dough into medium-sized scones. Spray the air fryer basket lightly with extra virgin olive oil to prevent sticking. Place the scones in the basket.
  4. Egg Wash: Brush the tops and sides of the scones with egg wash to give them a golden finish.
  5. Air Frying: Preheat your air fryer to 180°C (360°F). Air fry the scones for 5 minutes at this temperature, then reduce the heat to 160°C (320°F) and continue cooking for another 12 minutes until the scones are golden and cooked through.
  6. Serving: Serve warm with strawberry jam, fresh sliced strawberries, and a dollop of cream, if desired.

Notes:

  • Height: For taller, magazine-style scones, double the ingredients and roll the dough to double the thickness. Extend the cooking time by 3 minutes for a fluffier texture.
  • Traditional Recipe: This recipe is a traditional British scone recipe from the 1960s. Feel free to modernize it to your preference with different flavors or toppings.
