Ingredients:
For the Fritters:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2/3 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
- Vegetable oil (for frying)
For the Glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions:
Prepare the Fritters:
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until evenly mixed.
- In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until just combined. Be careful not to overmix.
- Gently fold in the diced apples until they are evenly distributed throughout the batter.
Heat the Oil:
- Pour vegetable oil into a large, heavy-bottomed pot, ensuring it reaches a depth of about 2 inches.
- Heat the oil over medium heat until it reaches 375°F (190°C). Use a thermometer to monitor the temperature closely.
Fry the Fritters:
- Carefully spoon about 1/4 cup of batter into the hot oil, frying a few fritters at a time to avoid overcrowding.
- Fry each side for 2-3 minutes, or until golden brown and thoroughly cooked.
- Using a slotted spoon, remove the fritters and place them on a paper towel-lined plate to drain excess oil.
Make the Glaze:
- In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until the mixture is smooth and well-blended.
Glaze the Fritters:
- While the fritters are still warm, dip each one into the glaze, ensuring they are completely coated.
- Place the glazed fritters on a wire rack set over a baking sheet to catch any excess glaze.
- Allow the glaze to set for a few minutes before serving.
Serve:
