Baked Cottage Cheese Eggs

Ingredients:

  • 6 large eggs
  • 450 grams (approximately 2 cups) cottage cheese
  • 100 grams (1 cup) grated sharp cheddar cheese
  • 25 grams (1/4 cup) grated Parmesan cheese
  • 30 grams (1/4 cup) all-purpose flour
  • 30 milliliters (2 tablespoons) melted butter
  • 5 milliliters (1 teaspoon) baking powder
  • 2.5 milliliters (1/2 teaspoon) salt
  • 25 grams (1/4 cup) chopped green onions
  • Fresh parsley, chopped (for garnish)
  • Optional: red pepper flakes (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
  2. Prepare the Mixture: In a large bowl, whisk together the eggs. Mix in the cottage cheese, cheddar cheese, Parmesan cheese, flour, melted butter, baking powder, and salt until well combined. Fold in the chopped green onions.
  3. Bake: Pour the mixture into the prepared baking dish. Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the top is golden brown.
  4. Garnish and Serve: Allow the dish to cool slightly before slicing. Garnish with chopped fresh parsley and, if desired, a sprinkle of red pepper flakes for an extra kick.
