Banana Pudding Rice Krispie Treats

These Banana Pudding Rice Krispie Treats have been a long-time favorite of mine, consistently delighting everyone who tries them. They present as a homemade delicacy that is both special and irresistible.

Ingredients:

  • 4 tablespoons unsalted butter
  • 1 packet (10 ounces) mini marshmallows
  • 6 cups Rice Krispies cereal

For the Banana Pudding Layer:

  • 1 package (3.4 ounces) instant banana pudding mix
  • 2 cups cold milk
  • 1 cup sliced bananas

Optional Topping:

  • Whipped cream (for garnish)

Preparation:

1. Prepare the Rice Krispie Layer (5 minutes):

  1. In a large pot, melt the unsalted butter over low heat.
  2. Once the butter is melted, add the mini marshmallows. Stir continuously until the marshmallows are completely melted and smooth.
  3. Remove the pot from heat and fold in the Rice Krispies cereal. Mix until the cereal is evenly coated.
  4. Transfer the mixture into a greased 9×13-inch baking dish, pressing it down with a spatula or wax paper to ensure it’s evenly distributed.
  5. Allow the Rice Krispie layer to cool and set at room temperature.

2. Prepare the Banana Pudding Layer (3 minutes):

  1. In a mixing bowl, combine the instant banana pudding mix with cold milk. Stir for about 2 minutes, or until the mixture thickens.
  2. Gently fold in the sliced bananas.

3. Assemble and Chill (2 hours):

  1. Once the Rice Krispie layer has set, spread the banana pudding mixture evenly over the top.
  2. Cover the dish with a lid or plastic wrap and refrigerate for at least 1 hour, or until the pudding layer is firm. For optimal results, chill for 2 hours.

4. Serve:

  1. Cut the Banana Pudding Rice Krispie Treats into squares.
  2. Optionally, top each square with a dollop of whipped cream before serving.
