Banana Pudding Rice Krispie Treats
These Banana Pudding Rice Krispie Treats have been a long-time favorite of mine, consistently delighting everyone who tries them. They present as a homemade delicacy that is both special and irresistible.
Ingredients:
- 4 tablespoons unsalted butter
- 1 packet (10 ounces) mini marshmallows
- 6 cups Rice Krispies cereal
For the Banana Pudding Layer:
- 1 package (3.4 ounces) instant banana pudding mix
- 2 cups cold milk
- 1 cup sliced bananas
Optional Topping:
- Whipped cream (for garnish)
Preparation:
1. Prepare the Rice Krispie Layer (5 minutes):
- In a large pot, melt the unsalted butter over low heat.
- Once the butter is melted, add the mini marshmallows. Stir continuously until the marshmallows are completely melted and smooth.
- Remove the pot from heat and fold in the Rice Krispies cereal. Mix until the cereal is evenly coated.
- Transfer the mixture into a greased 9×13-inch baking dish, pressing it down with a spatula or wax paper to ensure it’s evenly distributed.
- Allow the Rice Krispie layer to cool and set at room temperature.
2. Prepare the Banana Pudding Layer (3 minutes):
- In a mixing bowl, combine the instant banana pudding mix with cold milk. Stir for about 2 minutes, or until the mixture thickens.
- Gently fold in the sliced bananas.
3. Assemble and Chill (2 hours):
- Once the Rice Krispie layer has set, spread the banana pudding mixture evenly over the top.
- Cover the dish with a lid or plastic wrap and refrigerate for at least 1 hour, or until the pudding layer is firm. For optimal results, chill for 2 hours.
4. Serve:
- Cut the Banana Pudding Rice Krispie Treats into squares.
- Optionally, top each square with a dollop of whipped cream before serving.
