Best Ever Crock Pot Chicken and Dumplings

Ingredients:

  • 1 onion, diced
  • 6 boneless, skinless chicken thighs
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 tbsp fresh parsley, chopped
  • 1 tsp poultry seasoning
  • 2 cups chicken broth
  • 1 can buttermilk refrigerated biscuits
  • 2 cups frozen mixed vegetables, defrosted
  • Black pepper to taste

Instructions:

  1. Begin by layering the diced onion at the bottom of your crockpot.
  2. Place the chicken thighs in a single layer on top of the onion.
  3. In a mixing bowl, combine the cream of chicken soup and cream of celery soup.
  4. Add the poultry seasoning, chopped parsley, and black pepper to taste, mixing thoroughly.
  5. Pour this mixture over the chicken thighs in the crockpot.
  6. Add the chicken broth, ensuring the chicken is well-covered.
  7. Set the crockpot to high for 5 hours, keeping the lid closed for the first 4 hours.
  8. After 4 hours, open the lid and add the defrosted mixed vegetables, shredding the chicken as you stir.
  9. Open the can of refrigerated biscuits, flatten each biscuit, and cut into four strips. Layer these on top of the chicken mixture.
  10. Allow the biscuits to cook for the remaining hour, then stir the mixture to incorporate the dumplings.
  11. Serve hot, garnished with freshly chopped parsley.
